How should I advise my ECAs on which products they should sell and what prices they should charge?

I think this question has no correct answer.
What could be cited as an advantage: it's a product that is rare in the ECA store or it still does not offer. If you opt for a product that is common there is a possibility that it will not approve it. Signs rarity is certainly an advantage.
As for the price, again, depends on what sells. If this product is offered by several vendors (same quality) then he need to watch that he do not put a price above them,because it's certainly not a good start.
