I have heard about Team Leaders with groups numbering in the tens of thousands! What do they do differently to build such a huge downline?

The size of their effort.

They didn't do anything different from or outside of what SFI teach us in our basic training as affiliates on building downline. They were doing and always do what we are doing. Simple Duplication method. BUT, if you inquire them the following:
1. Number of hours they devote to SFI each week.
2. Amount say per month they invest in the right advertising of their business.
3. Communities he/she "hangouts" and social with.

Why do you need to communicate with them? When the need rise up? Primarily because you want anwers, help and guide. New affiliates will have questions in their mind about SFI, help to get started, and guide, even months after you joined. And ofcourse you may ask how they are, share useful information and ideas.

So, how often? No, it should be : When?

When you need it, when you want it, don't hesitate to contact them.

When I am fully self-employed with SFI, and someone asks what I do for a living, what do I tell them?

You are a Strong Future International Marketing Group Affiliate.

It's up to you if you want to elaborate or not. But I'm sure the people who ask the question will want to know more. You'll be answering more specific questions. Before you know it you'll be promoting SFI to them. The Launchpad will cover almost everything you or other people need to know about SFI.
