How often should I communicate with my Sponsor and Co-Sponsor?

Mate!!!
There is only ONE answer here. If you are stuck and have problems get
on to your sponsor. If he doesn't answer go straight to your co-sponsor.
One of them should answer. But if they don't go to your a2a friends or
just go back through your tutorials and see if you can find the answer
there.
I need a mentor. What's the best way to find a mentor for SFI?

Your sponsor should be mentoring you, but if he is not being helpful enough, you can go to A2A and friend people and ask your questions, the guys in there are supportive and very helpful.
Following up from that perhaps you will find your mentor among the people that you friend and chat with.
