What advice would you give to an SFI affiliate who wants to create and maintain their own SFI website?

Based on your question I have no idea why anyone would want to do this.
The whole point of SFI is allowing affiliates to have a business without the usual administration of running a traditional business, in this case ensuing that the website is up to date (prices, new updates, new products etc.) , safe from hackers and does not infringe any copyrights just to name a few.
I would rather advise them to create a website that promotes their SFI business and creates hits for sign ups and sales.

There is a lot of truth in the saying "you can take a horse to the river, but you can't make it drink"
I would spend my time showing the affiliates that want to have a business with SFI and show them how to make a success of it than spend my time trying to change people's mind.

What they are:
The most successful affiliates are ECAs and/or Team leaders.
What they do:
What I have also noticed about the leaders in SFI is that they log in daily. They are E365 finalist. They have a S-Builder co-op and a standing-order.
Where they are:
This means they are likely to be at the top on the power ranks.
They are visible on the Forum and the Pricebender auctions.
This is my observation.

All new affiliates must read through the Launchpad. That is first and most important step.
secondly they can ask you questions, or to explain some things.
They can ask questions on the Forum.
They must spend their time going through the website and FAQ to gain more understanding.
As their sponsor, you need to keep in touch with them and keep the communication lines open.
If they live near you, meet them and chat to them face to face about SFI.

"What is the best way to convince someone who is over 50 that they should get started with SFI?"
- With poeople 50 very close to retirement, they are aware of the fact that most of the time no everyone has enough money saved for retirement, the best way to boost that retirement fund is to make extra income with SFI online business.
- People over 50 have less social commitments than people in thieir 20's or 30's, this gives more time to focus on their SFI business.
- People over 50 are more experienced in people's skills which makes them better at face-to -face marketing.

How do I get my downline members to participate in my team contests?

What I have observed is the goal must be attainable. The contestants need to know how what position they are in the competition and what the target is. And using emails works better than just putting on your leadership page and include consolation prizes for those who did not win but came close.

How would it benefit me to transfer TCredits to my PSAs or CSAs?

You would transfer TCredits to PSA and CSA to enable to buy items from TripleClicks so they can become EAs.
Once they are EAs you then earn matching VPs and commission on their purchases.
Other instances where you transfer Tcredits would be encourage them to achieve higher goals.
basically, the more successful your team is, the more successful you are.

Besides the To-do-list, another way to earn VersaPoints is to enter the T-Time on TripleClicks, win 2 TCredits and use those to enter the DP auctions, you receive 20MRPs and 2 VersaPoints in total. Once you build up your MRPs, you can use them to buy more TCredits.
It might not be much, but every bit counts in the end.
What is the best plan to give your new PSAs to help them get started...from day one through their third month in SFI?

Let them know you are there for them when they have questions, they can email you.
Encourage them to read the material available on SFI to gain better understanding and ask questions.
Go through with them their VP ledger so they can understand how to obtain points.
Make them understand the importance of doing their daily tasks to earn VersaPoints.
Encourage them to familiarise themselves with the TripleClicks website and everything it has to offer including T-Time.
Help them understand the terms and what they mean, like TCredits, MRP and what they can do with them.
As they enter their month, show the various way in which they can start duplicating themselves and maintaining their status.
