I am not very good at talking to people. How can I talk to them about SFI or TripleClicks in a simple and easy way?

I was the same way but now I don't have any problems because of practice.
1) Write a script and memorize it.
2) Practice talking with yourself, in front of a mirror is okay but just repeat your talk until you feel comfortable.
3) Stand up in front of your family or friends and practice giving your talk and let them ask questions.
4) Soon you will be able to talk to anybody about SFI!

By far, the most important thing you should be doing is training your down line.
1) Find PSAs
2) Train and teach them how to achieve their goals each month
3) Train and teach them how to duplicate what you are doing to have a successful SFI business
Without training, your PSAs will not achieve their goals as fast as they like and might quit SFI. So teach and train your PSA and you will be successful with SFI.
How do you handle prospects and affiliates who expect to get rich fast?

Tell them if they want to get rich fast, then play the lottery because SFI is not a get rich quick program. Like any business, it takes time and a lot of effort to create a successful business of any kind.
If you find a "get rich quick" business, then all you will do is get poor quick. These businesses are designed for the program creator to get rich quick.
After telling them this, you should have the door open to discuss SFI. Be sure to tell them that it is a real business and how much you enjoy logging on everyday to see what's new and the opportunities SFI gives you.

Which is better...doing two separate blogs about SFI and TripleClicks...or a single blog about BOTH?

I prefer making one blog for both SFI and TripleClicks because:
1) It takes less time to create and maintain one blog.
2) You only need to remember one web address
3) It is cheaper to pay for one blog address than buying 2 website addresses, 1 for each blog.
4) I like knowing I have all the information in one place, not scattered in 2 different blogs.
